The Best Double Chocolate Chip Cookie Recipe

2 cups any kind of flour (I used almond)
1/2 cup cacao powder (you could add more or less depending on how chocolatey you want them!)
1 tsp baking powder
½ tsp salt
6 tbsp coconut oil, melted
2 large eggs
2 tsp vanilla extract
1 cup (192g) monk fruit sugar
handful of dark choc chips
Preheat the oven to 350°F, and line a baking tray with parchment paper.In a large bowl, combine flour, cocao powder, baking powder, and salt. In a stand mixer add butter, eggs, and vanilla and monk sugar. Add the dry ingredients into the wet, and mix on a low speed until fully combined. Add in the chocolate chips.Scoop the dough into small balls (I recommend an ice cream scooper to make the balls) onto the baking sheets, and flatten the balls to any thickness. Bake at 350°F for about 10-13 mins. After baked and cooled on the tray for about 15 mins, eat them while they are warm! Enjoy!
