Protein Packed White + Dark Chocolate Chip Cookies


1 cup coconut sugar

1 cup monk fruit sugar

1 egg + 1 yolk

1 cup Greek yogurt

2 cups almond flour

2 cups protein powder

1 tsp baking soda (dissolved in 2 tbsp hot water)

1 tsp baking powder

1 tsp cinnamon

1 tsp vanilla extract

1 tsp salt

white chocolate chips

dark chocolate chips


  1. Combine sugar and Greek yogurt in a stand mixer. Mix on low for 2 minutes.

  2. Add one egg + one extra yolk.

  3. In a small bowl, mix baking soda with warm water. Stir until dissolved.

  4. Add baking soda to the mixer along with the vanilla extract. Mix on low for another 2 minutes.

  5. Combine flour, protein powder (can be any flavor, I used half vanilla and half cake batter), baking powder, cinnamon, and salt in a separate bowl.

  6. Slowly mix the dry ingredients into the stand mixer until fully combined.

  7. Fold in the chocolate chips. You may use any amount desired! I used 1/2 cup of white and 1/2 cup of dark chocolate chips.

  8. Let mix chill in the refrigerator for at least 1 hour.

  9. Preheat the oven to 350º.

  10. Bake for 10-12 minutes.


  • Note: cookies will spread in the oven, so ensure each has enough room so they do not bake together!
