Snickerdoodle Cookies

Ingredients:

1 1/4 cup almond flour 1/4 cup all purpose flour (can be subbed with gf flour) 1 tsp baking powder 1/4 cup olive oil (coconut oil works too, i just dont have any right now!) 1/2 cup coconut sugar 1 tsp baking soda 1 tsp cinnamon 1 egg Coating:


1/4 cup coconut sugar  2 tbsp cinnamon

1. Preheat oven to 350 degrees F. In a bowl mix almond flour, all purpose flour, baking powder, baking soda, and cinnamon. 2. In a separate bowl, whisk your oil of choice, coconut sugar and egg.  3. Slowly add dry mix into wet. Your mic should be pretty sticky. 4. On the side, prepare the coating. In a small bowl mix 1/4 cup coconut sugar and 2 tbsp of cinnamon.  5. Spoon your mix into small balls and completely coat in the cinnamon + coconut sugar mix. Place on a prepared baking sheet. Repeat until you’ve use all the mix. 6. Bake for 10-12 minutes at 350°. Let cool on a cooling rack for 15-20 minutes before eating. Enjoy!
