No-Bake Puffed Quinoa Date Bars!

Ingredients:


3/4 cup puffed quinoa ( you can buy pre-puffed quinoa or make your own with this recipe: https://www.thespruceeats.com/how-to-pop-andean-cereals-3029692)

3/4 cup peanut butter

about 10 dates

1/4 cup maple syrup

3 tbsp cacao powder

Chocolate chips (optional)


Directions:


In a food processor, blend up your dates until they create a thick paste. Slowly add in your peanut butter and maple syrup to the food processor. Lastly, add in your cacao powder. Take your mix out of the food processor and into a large bowl. Mix in the puffed quinoa and chocolate chips. Place mixture into a glass baking dish and refrigerate for 30 mins. You can then cut them into any size pieces you'd like. Store in refrigerator and enjoy!
