Healthy Peanut Butter Chocolate Rice Krispy Treats


Ingredients:


4 cups puffed brown rice

1 cup peanut butter

3/4 cup maple syrup


1 cup unsweetened chocolate chips

2 tbsp coconut oil

optional: 2 tbsp cocoa powder (for extra richness)


Directions:


1. Add puffed brown rice to a large bowl.

2. Combine peanut butter and maple syrup on the stove top. Heat on low for 3 minutes.

3. Pour peanut butter mix into your bowl with the rice cereal and mix until fully combined.

4. Line a 9 x 9 baking dish with parchment paper.

5. Pack the rice Krispy mix into the dish.

6. Refrigerate for 15 minutes.


7. Take out of refrigerator and prepare chocolate topping.

8. Melt chocolate chips & coconut oil together in microwave in increments of 30 seconds until fully melted, stirring occasionally.

9. Once melted, add in cocoa powder (optional).

10. Pour on top of rice krispies.

11. Refrigerate for at least 1 hour before eating. Store in the refrigerator.
