Healthier Ice Cream Sandwiches

Cookie ingredients:


1 + 1/2 cups of flour, heat treated

3/4 cup almond flour

1/4 coconut palm sugar

1/4 cup maple syrup

1/4 cup almond milk

2 tbsp honey

pinch of salt

1 tbsp of cinnamon

cacao nibs


Ice cream ingredients:


2 cups almond milk

1/2 a banana

1/4 cup coconut palm sugar

drop of vanilla extract

pinch of cinnamon

Optional: If you want your ice cream to be creamier, add a full can of coconut milk.


Directions:


To make the cookies:


  1. Heat treat your flour to get rid of any bacteria. To do so, you can microwave your flour for about 2 minutes.

  2. Combine all ingredients in a bowl. (I like to add the cacao nibs after everything else is combined, I think its easier to mix that way, but you can incorporate them whenever!)

  3. If you think your mixture is too stiff, add more almond milk. It should be the consistency of cookie dough.

  4. Spread out mixture on a baking sheet. It should be even.


To make the ice cream:


  1. Combine all ingredients in a blender. Blend until smooth.

  2. Pour ice cream into an 8x10 baking tray and freeze for at least 4 hours.


Making the sandwich:


  1. Take your cookie sheet out of the refrigerator and cut directly in half.

  2. You should have 2 large, square cookie pieces.

  3. Remove ice cream from freezer. Scoop on to one of your cookie pieces.

  4. The ice cream might be able to all come up in a big piece. If it can, place it on one of the cookies.

  5. Put your other cookie slice on top of the ice cream. You should have what looks like a giant ice cream sandwich.

  6. Cut into preferred ice cream sandwich sizes. I got about 10 sandwiches out of this.

  7. Place sandwiches in an air-tight container, and freeze for at least 2 hours.

  8. Enjoy!

Notes:

  • Even when freezing the whole sandwich, the cookie stays soft!

  • I am so obsessed with the cookie mixture, It would make an amazing edible cookie dough.

  • The ice cream can be a bit icy without the coconut milk, so I really recommend using it for the full ice cream effect!
