Crispy Chickpea Nuggets

Ingredients:
1 can of chickpeas
1/3 cup rolled oats
1/2 cup breadcrumbs
2 tbsp garlic powder
1 tbsp Italian seasoning
1/2 tsp paprika
pinch of salt
Directions:
Preheat oven to 400 degrees F.
Drain chickpea liquid into a bowl. Put aside. Do not throw it away! You will need it later.
Rinse chickpeas and dry well.
In a food processor, blend your oats. Put aside in a bowl.
Once chickpeas are fully dry, add into food processor with garlic powder, paprika and salt.
Add the oat mix back into the food processor until you have a moldable dough texture. You might have to add a bit of water if the mix seems too dry.
Shape the dough into nuggets. I got 11 nuggets out of this mix.
Coat the nuggets in the chickpea liquid, and then into the breadcrumbs. Make sure they are fully covered.
Place nuggets on a lined baking tray and bake for 18-20 minutes, or until desired crispiness.
Pair with your favorite dipping sauce.
