Baked Oatmeal Breakfast Muffins

These are super great when you have few ingredients in your house or are looking for a quick and easy bake!
Ingredients:
3 packets of oatmeal (about 3/4 cup of oats if you don't use boxed)
1 egg
1/2 cup apple sauce
1/2 honeycrisp apple
1/4 cup almond milk
2 tbsp olive oil
1 tsp baking soda
1 tsp baking powder
pinch of salt
cinnamon to taste (I like to use a lot!)
Directions:
Preheat oven to 350 degrees. blend 1 of your oatmeal packets (1/4 cup oats) in a blender or food processor to make oat flour. Add oat flour to bowl with the other 2 packets of oatmeal. Add the egg, apple sauce, almond milk, olive oil, baking soda, baking powder, and salt to the bowl. Chop up 1/2 honey crisp apple or apple of choice (those are just my fav!) and add. Lastly, add cinnamon.
Lightly coat muffin tin with any kind of oil you have. Pour mix into tins about 3/4 of the way full. Bake at 350 degrees F for 18-20 minutes.
